Seeding tempering – consistency, speed, and shine
The MAGIC TEMPER is a seeding tempering machine, specially designed for artisan chocolatiers, confectioners, and R&D centers.
Thanks to the use of cocoa butter containing stable polymorphic forms, it ensures rapid and controlled crystallization.
A compact, reliable, and easy-to-use tool, designed for tempering couvertures, ganaches, pralines, and fillings. It significantly improves the quality of finished products: better shine, optimal textures, clean snap, and quick demolding, while greatly reducing the risk of fat bloom.
With a 3 kg capacity, the MAGIC TEMPER is perfectly suited for daily productions of up to 600 kg. It also allows for casting pralines at higher temperatures, reducing demolding times without compromising quality.
The tank is equipped with a lid with a thermal shield, ensuring perfect homogeneity of the masses. Temperature adjustment is done digitally with a range of +30.0 °C to +35.0 °C and a precision of 0.1 °C, eliminating any risk of liquid phase. Regulation information is displayed on an LCD screen for clear and quick reading.
Designed to last, the device is easy to clean, thanks to its rounded tank bottom and smooth exterior surfaces.
